Have you ever heard George Winston's piece "Thanksgiving?" It's one of his most popular pieces. In it, he creates a nice harmonic accompaniment with his left hand while the right plays melody.
To compose something like this requires that you learn about phrases. All he's doing is repeating a 8-bar phrase. The chords are all mapped out on a chord chart (8-bars) for the first phrase and he just repeats it over and over. I haven't listened to the piece recently so I don't know if there are any more sections of music, but this is how he probably very quickly charted out the (A) section of the piece.
